This is totally random and weird of me to upload this….

This is an old job for me. I once tried out working in a wholesale pastry company. But I don’t work anymore there, haha.

What can I say… I felt like I was a factory worker.
It looks pretty dead and empty doesn’t it? Nothing cool as you see on TV shows like “Cake Boss.” Or when you look into kitchens at cafes and etc.

I guess that’s perhaps the reality of it. Some of those places only exist far away or if you have the talent/ you’re lucky to score a job there. I have yet to find a nice job where you can bake things on-site… You’d be surprised how many cafes actually have an off-site kitchen and then just bring it in and use their mini kitchen for reheating or refreshing/storage.

Anyway, the wholesale company I worked for… we baked in huge batches. Like I mean huge. Per recipe I would weigh over 3kgs worth of egs. Do you know how pro I got at cracking eggs!? Daily I would pipe over 300 cupcakes and muffins. That was just the plain ones, that wouldn’t include the specialty ones.

Anyway, we baked for airplanes (first class mainly), cafes and we got ordered cakes that would have to be decorated and etc.


It was fun while it lasted but I just felt beat. It’s not really the area where I wish to work in. I don’t like wholesale at this moment. But being a *soon to be graduated* pastry chef entitles that I will have to work in places like this until I get more experience and work myself up to places where I can work onsite or prepare amazing things.

There are numerous bakeries, catering companies, resturants and pastry shops, chocolate shops and candy shops I could go for. 

At this moment I would love to work in a dessert shop or even chocolate and confectionery could be quite fun.

At the end of the day I have 2 goals. Well, one being a goal and another being a very far off dream. First is to get onto a cruise and work for 6 months. I’ve gone through everything. I know the hours, I know the conditions and I am up for it. But in order to get there I must have experience. Which is what I’ll be doing right after I graduate. As for which cruise, I’m not necessarily picky. 

But my wish/dream is to own an ice cream or dessert parlor for young adults and families. Auckland, where I live, lacks places like this. Heck, it lacks Ice Cream parlors that are considered *well priced* or *cheap* The only ice cream parlors that are around are swiss gourmet and italian gourmet which tends to get realllly pricey. (over $6 for 1 scoop) Not something you would take your kids to very often of course. 
But in my mind I’ve dreamt up an awesome 80s or something looking Diner that serves all desserts, ice creams and perhaps a couple of hamburgers and what not. Also a place where people can meet up and chat. 

But perhaps I should rather explore the world first (and find it in another country :D). My degree is international as well. One of the exams we sit is from a British college, City and Guilds, which means most of Europe becomes an open door for me. Yes I would also love to work and travel. I know Europe has a lot to offer for Pastry Chefs. Heck, any country does!
